2018-05-29 11:55:12Love fresh food from local sources? So do many of StayVA's fine bed and breakfast properties! That's why we're shining the spotlight on two Virginia farm-to-table b & b's that use as many local sources as possible to prepare their morning breakfast.
Fox Hill B & B and Suites
Just south of Staunton in the Shenandoah Valley in the small town of Fairfield, you'll find Fox Hill B & B and Suites.
With walking trails, a spring-fed stream and several waterfalls on the property, you get not only a gorgeous view of the Blue Ridge Mountains, but you're surrounded by nature.
Fox Hill grows many of their own fruits and vegetables, including multi-colored sweet peppers, spinach, corn, broccoli, and tomatoes. Chef Mike makes fresh salsa and Innkeeper Cathy uses blackberries, strawberries, and zucchini for her delicious baked goods.
A local beekeeper manages the beehives on the property, which means the honey is always fresh. Plus, the bees help with pollination for the fruits and vegetables that are grown there.
What the b & b doesn't grow, they seek out from the local community. Typically, during growing season, they will travel to local U-Pick farms and gather as much produce as they can.
It's not unusual for them to pick 50 pounds of various fruits which are used in their inn recipes and also frozen to enjoy in winter.
This Virginia farm-to-table b & b's bacon and sausage are also procured locally. The fresh pork shoulder is made for sausage and the pork belly is used for their maple/bourbon cracked pepper and applewood smoked bacon.
It takes three weeks to make the bacon and Chef Mike only smokes 10 pounds at a time.
For a taste of rural life and a fresh, locally sourced breakfast food, enjoy the fine hospitality of Fox Hill B & B and Suites.
